HOW DOES YEAST DOSAGE AFFECT WINEMAKING?

As we have mentioned in previous publications, we know that yeasts are the microorganisms responsible for transforming sugar into ethanol. In addition, they are also responsible for shaping the profile of a wine thanks to the set of enzymatic activities they carry out. For this reason, it is essential to know the optimal conditions for working with them.
A fundamental part of the evaluation of the final result of a wine is the performance of the yeasts used in the winemaking process. These microorganisms are part of the ecosystem, so they reflect its own characteristics. As you know, at LEV2050, since our inception, we have been committed to selection studies that allow wineries to have their own yeasts and take advantage of this unique microbiological richness to distance themselves from the uniformity derived from the use of LSA. In this way, unique wines are obtained that would otherwise be impossible to obtain.
It is therefore easy to understand the importance of yeasts, especially when it comes to ensuring safe fermentation.
But how does yeast dosage affect winemaking?
The inoculation rate is simply the number of yeast cells inoculated per unit volume of wort. It is usually expressed in millions of yeast cells per millilitre of wort (M/ml).
The inoculation rate is conditioned by various limiting factors for yeast during the exponential growth phase. In other words, the more adverse the multiplication conditions are, the higher the inoculation rate should be. These factors are mainly the fermentation temperature, the osmotic pressure, the pH or the load of phytosanitary products.
For example, a must A, with 13 GAP and pH of 3.6, fermented at 23°C will have less problems to reach a good population at the end of the exponential phase than a must B, also with 12.5 GAP, but with a pH of 3.3 and fermented at 14°C. Therefore, in the B wort we should seed at a higher dosage. And if we talk in figures, in must A we can seed at 1.5 M/ml, while in must B it would be advisable to go to at least 2 M/ml.
Another important point that should not be overlooked, especially in the current situation, is the level of botrytis affectation. The recommendation is to go, also in these cases, to higher doses.
