Tasting of the François Lurton winery

We bring you a new tasting we carried out last 11th August, together with the François Lurton winery.

It was the study of isolation, identification, selection and characterisation of the winery’s own yeasts. During the tasting, we tasted the mixed microvinifications of this study.

To carry out the tasting of this study, the following people travelled to LEV2050: Alfredo Mestre (Rueda / Toro oenologist), Germán Nieto (head of the winery) and Xavier-Luc Linglin (technical director of the winery). Here the tasting took place together with Rafael Salgado (LEV2050’s oenologist).

What did the tasting consist of?

Previously, in a prior tasting, we tasted 20 microvinifications, all of them coming from the same grapes. However, each microvinification was carried out with a different yeast as fermentation starter. This yeasts were both from the Saccharomyces genre, as well as from other diferent species form the Non Saccharomyces genre. Nevertheless, all these strains have one thing in common: they all belong to the François Lurton winery. They were isolated, identified and characterised in microfermentations by LEV2050.

The tasting showed that each of the microvinifications presented totally different organoleptic profiles. After tasting them, the winery chose the yeasts that revealed the best profiles in the wine, taking into account the analytical data resulting from each fermentation.

Afterwards, we carried out different mixed microvinifications with these selected yeasts, using blends of them as fermentation starters, looking for synergies between them. This is what we tasted on the 11th of August. We saw some really interesting combinations of yeasts.

By doing this, the François Lurton winery will be able to decide which combinations of its own yeasts they like best, and they will be able to use them in later fermentations. Thanks to this, they will be able to obtain wines with their own unique profiles in this coming grape harvest.
