What is this article about?

This article talks about the history, achievements, products and services offered by LEV2050.
As the article says, LEV2050 is a company dedicated to innovation in industrial microbiology since 2010: “Since then it has continued to promote the existence and interest of indigenous yeasts and bacteria for the expression of the typicality of different food products”. Thanks to this, we are present in the wine, meat, dairy, bakery and brewery sectors.
After this, they define the premise with which we started LEV2050: get to know the microbiota present in the different food products, and get to know the fundamental role of the different microorganisms in fermentation (at the level of fermentative capacity, quality and resulting organoleptic profile).
It explains the beginnings with the studies of isolation, identification, characterisation and selection of own yeasts for those wineries that are committed to understanding the biodiversity of their terroir. In the same grape we can find a great biodiversity of genera, species and strains of different yeasts. These offer different results in the final wine.
It also explains that LEV2050 found that the microbiota within different fruits from different food markets is much more quantitatively and qualitatively significant than the microbiota in the skin.
As mentioned in the article, LEV2050 has isolated all types of yeasts. In addition to the well-known Saccharomyces, LEV2050 found many other yeast genera (Non-Saccharomyces) present in the different fruits. These had not been previously used or described in the literature for their use in fermentation.
In recent years, LEV2050 has also developed studies to provide these different yeasts at the agronomic level, in crops, in lysate or inactivated form. By this, they act as biocontrol agents, as well as biofertilisers or biostimulants in the field. In other words, from the field to the production of the final product, closing this circle of autochthony and biosustainability.
Finally, the European Commission awarded this innovative offer, which was defended in Brussels under the name ECOBIOMASS. It culminated in the installation of patented bioreactors in the different industries. Thus, they can efficiently grow and obtain their own microorganisms for the different parts of the production process.
